Barbera

Chambourcin

Chambourcin is a French
hybrid variety that has become extremely popular because of its adaptability to
the Atlantic coast weather. Naturally lower in tannins, Chambourcin is
fermented in stainless steel and bottled without oak aging to preserve its
fruity and light character. Malolactic fermentation is usually encouraged to
soften its natural higher acidity.
Medium-bodied and generously fruity,
our Chambourcin display a strong varietal character with hints of cherries,
plums, and raspberries. Enjoy with pasta, pizza, and red meats. Serve at room
temperature.

Cabernet
Sauvignon

Our Cabernet Sauvignon has been
produced using selected California grapes which were meticulously inspected by
our wine maker during the growing season and just before crushing. The result
is a full body, beautifully structured wine that has retained an overwhelming
aroma of black cherries even after 14 months of aging in French oak barrels.
An outstanding complement to all red meat dishes, pork, rack of lamb
and roast duck. Serve at room temperature.

Hopewell Valley Vineyards
oldest vintage, our 2003 Merlot was sourced from Long Island vineyards
expressing flavors and aromas typical of its terroir. This medium-bodied red
wine was fermented on the skins in stainless steel tanks and aged in French oak
barrels for 12 months to fully express its structure and to add complexity with
hints of nut and vanilla.
Deep red in color with flavors of cherries,
plums, and well balanced tannins our 2003 Merlot is an excellent complement to
grilled and roast beef, cheeses, rack of lamb and roast duck. Serve at room
temperature.

Rosso della Valle

A blend of
Cabernet Sauvignon and Chambourcin, this wine is fermented in stainless steel
and aged in bottle for 6 months in order to preserve its fresh and fruity
flavors.
Medium-bodied with a smooth long finish and deep red color,
our vintner's blended Rosso della Valle embodies sweet aromas of raisins,
raspberries, and plums. Rosso della Valle is our most popular wine for its

Chardonnay

Hopewell Valley Vineyard
Chardonnay is sourced from premium California grapes which are carefully
selected and shipped cold to our winery in Pennington. After cold fermentation
in stainless steel tanks, the wine is transferred into new American oak barrels
for a period of 6 months, accenting the natural fruit flavors with hints of
butter and vanilla. The aging journey is concluded in bottle for an additional
period of 4 months.
Medium-bodied with a smooth finish, our oak aged
Chardonnay suggests flavors of pears, apples, and vanilla. An excellent
complement to seafood with
rich sauces, chicken, veal, and aged cheeses.

Vidal Blanc

Like Chambourcin, Vidal Blanc is a
French Hybrid variety that is extremely suitable for the Atlantic coast
weather. Its grapes are light and fruity with good natural acidity. Our
winemaker beautifully preserves these fine characteristics by vinifying Vidal
in stainless steel tanks and by halting cold fermentation around 1% residual
sugar.
Light bodied and slightly sweet, our Vidal Blanc is a crisp and
fruity wine with accents of apples, pears, and grapefruit. A great aperitif

olive oil is produced from hand harvested and traditionally milled olives grown
at the Fattorie di Laura in Tuscany. The farm, owned by our vitner's sister
Laura, lies on a hill on the Tuscan coast with breath-taking views of the
Mediterranean sea.
The oil is directly shipped to our vineyards as it
is produced to maintain its original flavor and aroma. Assertive on the palate
with fruity and peppery tones and green-tinged gold in color, our extra virgin
olive oil is ideal for soups, pastas, grilled meats, and tomato based dishes
