TASTING NOTES: Sweet and fruity, Dolce Vita is made from the Vidal Blanc grape harvested in late November after the leaves have fallen and the fruit has acquired a raisiny taste. Dolce Vita has hints of raisin, pear, and citrus. Serve chilled at 45 degrees.
THE GRAPE: Vidal Blanc is one of the grape vines that adapts the best to the Atlantic region all the way up to Canada. Very characteristic is the grape skins that are really thick and tough which allows the grape to stay on the vine way past normal harvest time. That's why Vidal is often used in late harvest wines or in ice wines in Canada. Vidal blanc is a white hybrid grape variety produced from the Vitis vinifera variety Ugni blanc (also known as Trebbiano Toscano) and another hybrid variety, Rayon d'Or (Seibel 4986)*
*Albert Seibel was a French viticulturist who created many hybrid varieties in an effort to contain the disaster of the phylloxera infection in European grape varietals.
VINTNER'S NOTE: Our Dolce Vita Late Harvest is made with our Vidal Blanc grape, ideal for late harvest and ice wines due to Vidal's naturally thick and resistant skin. It has a distinct raisiny taste and amber color typical of most late harvest wines.
PORTO BIANCO

TASTING NOTES: Luscious fruit aromas of grapefruit, pears, and apples, with sweet mouth-filling flavors, our Porto Bianco is the perfect dessert wine and after dinner sipper. Made with the traditional method of adding brandy to the fermenting must to create a perfect balance between sweetness and body. Serve chilled. Percent of sweetness: 8%

VINTNER'S NOTE: Port is made be adding brandy to the fermenting wine must, in order to halt fermentation at around 18% alcohol and 8% residual sugar. You can quickly stop the fermentation by adding brandy. The 18% alcohol content in conjunction with the 8% sugar make port's longevity and shelf life almost indefinite. Some ports are aged for over 50 years!
PORTO ROSSO (Red Port)

TASTING NOTES: A distinctive black cherry nose with hints of caramel, dry fruit and vanilla, our deep-brownish red port is an ideal complement to aged cheeses and chocolate based desserts. Serve at room temperature.
THE GRAPE: The Chambourcin grape is a hybrid variety created by Joannes Seyve around 1950 by crossing Seyve-Villard 12-417 and Chancellor. It requires a long growing season and when fully ripen can produce bold and full bodied wines with intense red-purple color. Because of its resistance to disease and its ability to create superior wines, Chambourcin is used to produce dry, deep colored wine with fully aromatic flavors without unpleasant hybrid nuances.
VINTNER'S NOTE: Port is made be adding brandy to the fermenting wine must, in order to halt fermentation at around 18% alcohol and 8% residual sugar. We age red port for at least three years in oak barrels, and then at least two years in the bottle.
CHOCOLATE PORTO ROSSO

TASTING NOTES: Distinct aroma of chocolate dispersed in the black cherry and dry fruit flavor background. Pairs well with all sorts of desserts, cakes, and as an after-dinner sipper.
